Southwest Chicken Wraps


I usually have at least two goals when cooking.

1. Cook tasty.
2. Cook healthy.

So the recipe is as follows:

Ingredients:
4 c. shredded bbq chicken
2 c. frozen corn, thawed
1 c. chopped fried sweet red peppers
1 c. minced fresh cilantro

Dressing:
3 tb. lime/lemon juice     
3 tb. olive oil
4 tsp. honey
2 tsp. ground cumin
1 tsp salt
1 tsp chilli powder
1/2 tsp pepper

Directions:
In a large bowl, combine the first five ingredients. In a small bowl whisk dressing ingredients.
If you wish to make wraps, put mixed green lettuce on a large tortilla then spoon the chicken mixture on top. Dip dressing over top as much as desired. You can  top with diced avocado if you desire.

I served the wraps with tortilla chips and diet coke.


If you are not the wrap type you can just toss the chicken mixture over tossed salad greens.

  2. So glad you started a blog so I can stalk you! The recipe looks delish, although I only have 4 of the 11 ingredients here :( I definitely want to try it. I went to IKEA yesterday and thought of you -- is the EKTORP couch the one you are ordering? If so I l-o-v-e it! I scored some dishes at 65% off there yesterday:)
